Soy Lady: Edamame Dip

Who doesn’t like a good bean dip? Charlene Patton from the Kansas Soybean Commission joins us with an award winning party dip recipe called Edamame Dip. It was submitted by Margaret Miller from Burdett, Kansas who won first place in the “quick and easy snacks” division at the 2018 Kansas State Fair.

Edamame Dip

INGREDIENTS:
— 2/3 cup fire roasted canned corn, drained
— 2/3 cup cooked and cooled edamame
— ½ cup sour cream
— ½ cup grated Colby jack cheese
— 1/3 cup mayonnaise
— 2 tablespoons canned diced green chilies
— 1 tablespoon finely chopped green onion
— ¼ teaspoon garlic powder
— ¼ teaspoon salt

DIRECTIONS:
— Combine all ingredients in mixing bowl and blend well.
— Serve with chips.

— Makes 2 cups.
