Soy Lady: Crockpot Meatloaf

Charlene Patton from the Kansas Soybean Commission shows KOAM’s Tawnya Bach how to make a meatloaf in the slow cooker. This particular meatloaf recipe earned third place at the 2018 Kansas State Fair in the Heart Healthy Main Dish competition. It was submitted by Stephanie King from Hutchinson, Kansas.
Crockpot Meatloaf
Ingredients:
8 ounces ground beef
1 package (14 ounces) tofu
1 ½ cup quick cooking oatmeal
½ teaspoon salt
¼ teaspoon pepper
1 can (14 ounces) sweetened condensed milk
4 slices bread, cubed
2 tablespoons catsup
1 tablespoon Worcestershire sauce
2 tablespoons brown sugar
1 cup water
Instructions:
Combine in large bowl beef and tofu.
Add oatmeal, salt, pepper, sweetened condensed milk and bread cubes.
Mix until well combined.
Place meat mixture into lined crock pot and form a loaf.
Combine catsup and Worcestershire sauce in a small bowl.
Pour mixture on top of meat and sprinkle with brown sugar.
Add water to the side.
Cook on high 5-6 hours or until fully cooked.
