Soy Lady: Cornbread Calico Favorite

Cornbread Calico Favorite

  • 1 cup soy flour blend
  • 1 cup cornmeal
  • 3 teaspoons baking powder
  • 1 tablespoon sugar
  • ½ teaspoon salt
  • ¼ cup chopped green onion
  • ¼ cup chopped sweet red bell pepper
  • ¼ cup crumbled cooked bacon
  • ½ cup grated cheddar cheese
  • 1 cup soy milk
  • ¾ cup creamed corn
  • 1 egg
  • ¼ cup vegetable oil

Combine soy flour blend, cornmeal, baking powder, sugar and salt in a large. Add green onion, sweet red bell pepper, cooked bacon and grated cheddar cheese; stir until evenly mixed. In second small bowl combine, soy milk, creamed corn, egg, and vegetable oil.  Add liquid mixture to dry mixture and stir just until blended.  Pour mixture into greased 8-inch square baking pan.  Bake at 400 degrees for 30 to 35 minutes or until lightly browned and wooden pick inserted in center comes out clean.  Makes one square.
