Pumpkin Patch Bars Recipe

PUMPKIN PATCH BARS 4 eggs 1 can (15 oz) pumpkin 1 ½ cups sugar 1/2 cups brown sugar, firmly packed 1 cup vegetable oil
1 ½ cups all purpose flour ½ cup soy flour
2 teaspoons baking powder 2 teaspoons pumpkin pie spice 1 teaspoon baking soda ¼ teaspoon salt

Preheat oven to 350 degrees. Combine in large bowl eggs, pumpkin, sugar, brown sugar and vegetable oil until thoroughly combined. Sift together all-purpose flour, soy flour, baking powder, pumpkin pie spice, baking soda and salt. Add dry mixture to pumpkin mixture; mix thoroughly. Pour batter into greased and floured jelly roll pan (15×10-inch). Bake at 350 degrees for 30 to 35 minutes or until done when tested with a wooden pick. Cool. Frost with White Creamy Frosting and then decorate with candy pumpkins and green decorating icing for vines. Makes 48 bars WHITE CREAMY FROSTING 2 cups powdered sugar 1/4 cup margarine, softened 13 cup soy cream cheese 1 teaspoon vanilla 1 teaspoon vanilla soy milk Combine powdered sugar, margarine, soy cream cheese, vanilla and soy milk in small mixing bowl until smooth. Spread over cooled bars.
