Mr. Food: Garden Quinoa Toss

What You’ll Need

1 cup uncooked quinoa
2 cups cherry tomatoes, cut in half
1 cup ( 1/2-inch dice ) seeded cucumber
2 tablespoons chopped red onion
1 (7.75-ounce) can chickpeas, rinsed and drained
1/ 2 cup crumbled feta cheese


1/ 2 cup olive oil
3 tablespoons red wine vinegar
1 tablespoon lemon juice
1 teaspoon dried oregano
1/2 teaspoon salt
1/4 teaspoon black pepper

What to Do

Cook quinoa according to package directions. Place in a large bowl; set aside to cool.
Meanwhile, prepare Lemon Vinaigrette by whisking together all the ingredients.
Add tomatoes, cucumber, onion, chickpeas and vinaigrette to the quinoa; toss to combine. Add cheese and lightly toss. Serve immediately or refrigerate until ready to serve.
