Mini Zucchini Pizzas Recipe

MINI ZUCCHINI PIZZAS

1 large zucchini, sliced
¼ cup seasoned breadcrumbs
¼ cup grated parmesan
1 teaspoon garlic powder
1 teaspoon dried parsley
1 egg, beaten
4 tablespoons vegetable oil
1 cup shredded cheese
½ cup tomato pizza sauce
Pizza toppings (as desired)
Salt & pepper to taste

Heat oil in large skillet over medium heat. Preheat oven to 450 degrees.

Combine breadcrumbs, parmesan, garlic powder, parsley, salt, and pepper in shallow bowl. Pour egg into second shallow bowl. Dip the slices of zucchini (they should be 4 inches in diameter, at least) into egg wash, then into bread crumb mixture, making sure the slices are well coated.

Fry breaded zucchini in oil for 2-3 minutes, or until golden brown. Place zucchini on paper towel-lined plate to cool for 2-3 minutes.

Once zucchini can be handled, top with cheese and pizza toppings of your choosing (we recommend Sunshine Farms sausage, peppers, tomatoes, and/or onions). Place in oven for 3-5 minutes, or until cheese is melted. Before serving, drizzle with pizza sauce.
