KOAM Thanksgiving: Turducken Roulade & Gram’s Hot Fruit
It’s Thanksgiving time on the KOAM Morning News on Fox 14 and our Morning Show Crew has got some recipes for you this holiday season.
Tawnya’s Traditional Turducken Roulade
1 lb boneless turkey breast
1 lb boneless duck breast
1 lb boneless chicken breast
1 cup uncooked rice
1 1/2 cups chicken stock
1 tsp kosher salt
1/2 tsp black pepper
1 tsp dried thyme
1 tsp dried rosemary
1 tsp dried sage
1/2 tsp garlic powder
1 cup prepared cornbread stuffing (i use stovetop stuffing)
8-10 slices of bacon
Prepare rice in rice cooker or on the stove with chicken stock and seasonings.
Butterfly and pound/roll out each meat to about 1/2 in thick.
Cover turkey breast with a layer of half the rice.
Lay duck on top and cover with the cornbread stuffing.
Top with chicken breast and cover with remaining rice.
Roll up tightly (like a jellyroll).
Wrap bacon slices around roll and secure with toothpicks.
Place in an oven bag in a roasting pan.
Back at 350 or 1 1/2 hours.
Remove from oven and let rest 20 minutes before serving.
Gram’s Hot Fruit
Preheat oven to 350 degrees.
In a covered, oven-proof deep dish, place the following ingredients:
1 large can of pineapple chunks in juice, drained.
1 large can of mandarin oranges in juice, drained.
1 large bag or container of bite-sized pitted prunes.
1 large bag or container of dried apricots.
1 cup dried cranberries.
1 can of cherry pie filling.
Mix ingredients together gently being careful not to get it on the sides of the container as it will burn.
Pour ½ cup of dry sherry over the top and cover tightly with aluminum foil. Don’t put the lid on while baking.
Bake covered for one hour. Remove carefully and stir gently so as not to tear fruit. Cover, serve, enjoy!
