Kansas Cider Baked Beans Recipe

KANSAS CIDER BAKED BEANS

3 C dry pinto beans, soaked overnight
2.5 C Kansas apple cider
2 onions, thinly sliced
1 green pepper, chopped
4 T molasses
3 T yellow mustard
8 oz. bacon (if desired)
2 t salt.

Soak beans for at least 12 hours in water. Drain the beans. Add bacon (if desired) to slow cooker, layering next the beans, onions, peppers and apple cider. Whisk mustard, molasses and salt together and add to top of slow cooker. Cook on high for 4-5 hours, reducing to low for another 1-2 hours before serving.
