Black Bean Brownies (aired 12/17/2013)
With the Pittsburg Farmer’s Market, aired December 17, 2013
2 cups canned black beans (rinsed & drained)
1/4 cup melted butter
1/4 cup cocoa powder
2 teaspoons vanilla
1/2 cup honey (or 1 cup sugar)
Chocolate chips and/or walnuts (optional)
Pre-heat oven to 350 degrees. With potato masher, smash black beans in large mixing bowl. Once an even texture, add eggs, butter, cocoa powder, vanilla, and sugar or honey. Mix until well combined.
Grease an 8x 8 (or 9 x 13) baking dish. Pour batter into dish and top with chocolate chips or walnuts, if desired. Bake at 350 for 40-50 minutes or until done in center.
